SAAFoST Cape Branch

Dear Cape Branch Member,

The Cape Branch Committee of SAAFoST is very privileged to host two of "our very own" young food scientists, Dr Donna Cawthorn and Greta Geldenhuys.

If you were not able to attend the IUFoST conference in Brazil during August then do not miss these talks!

Donna received one of the seven IUFoST young scientist awards, to deliver her research paper at the IUFoST conference and will present to us:

"Is there horse in my wors? DNA testing reveals a high incidence of species substitution in meat products in South Africa"

Donna Cawthorn obtained her BSc and MSc degrees in Food Science (cum laude) at Stellenbosch University (US) in in 2005 and 2007, respectively. She went on to complete a PhD degree in Food Science in 2011 at the US, with her project focused on the establishment of a genetic database and molecular methods for the identification of fish species in South Africa.

Her interest in Meat Science led her to join the Department of Animal Science (US) as a post-doctoral fellow in 2012. Her current work includes the development of DNA-based methods to detect species substitution and adulteration of commercially available meat products. Donna was awarded the SAAFoST prize for the Top Academic Achiever in Food Science in 2004 and 2005, and received Honorary Colours for Academics from the US in 2006.

She has published more than 10 papers in international peer-reviewed journals and has presented over 50 oral presentations on her work. Her oral presentation abilities have been recognised through the award of the Dreosti Award for the best oral presentation at the 19th biennial SAAFoST congress in 2007 and the prize for the best oral presentation at the South African Wildlife Management Association (SAWMA) Congress in 2011. She was also one of seven researchers in the world to receive the 'IUFoST young scientist award' in 2012 and was thus given the unprecedented opportunity to address the global food science community on her work.

Greta received one of the two SAAFoST student travel awards to attend the IUFoST conference and will present to us her involvement at and experience of the conference.

Greta Geldenhuys obtained her BSc degree in Food Science at Stellenbosch University (US) in 2009 where after she started an MSc study in Meat Science, focused on establishing the meat quality of Egyptian geese. The potential of this project as well as her enthusiasm and dedication towards her field of study has led to the upgrade of her MSc to a PhD during the early stages of 2012.

She is currently focussed on investigating the effect of certain, post-mortem, biochemical processes on the tenderness of Egyptian goose meat as well as exploring techniques of improving the tenderness. She was one of the two candidates who received the SAAFoST student award to attend and present her research at the 16th World Congress of Food Science and Technology in Brazil, 2012.

The venue, snacks and drinks are very generously sponsored by Swift-Silliker.

Places are limited, so book early to avoid disappointment.

We look forward to seeing you there!

Kind regards

Jacques van den Berg
