Content vs composition - what's the next phase in cereal science research?
Synopsis
For many years, cereals have been produced and traded based on one or two chemical components such as protein content. Recent interests in functional foods have given cereal chemists the incentive to explore both the macro and micro components in the context of content and composition. In Australia, two key areas of starch and non-starch polysaccharides research are being studied to provide data for breeding programs and industry to consider functional quality in a range of different cereals including wheat, barley, sorghum and maize.
