Reminder - with updated programme, detailed map and speaker CVs
Dear Members,
As indicated in last week's save-the-date notice, the Mexican Embassy in South Africa has proudly advised that it will be bringing a group of the world's leading experts on Nixtamalization to South Africa.
The University of Pretoria will be hosting the group and in appreciated collaboration with SAAFoST, has organised a Maize Nixtamalization Mini-Symposium as set out in the programme below.
This will be held on the morning of Friday 7 October, at 09:00 for 09:30 until 12:30, at the Mexican Embassy in Pretoria, the address of which follows.
Anyone involved or interested in the processing of our national staple will be keen to know more about nixtamalization - the wonder processing technology for maize and other gluten-free cereal grains for making flatbreads, wraps and snacks such as tortillas, arepas and tacos and that improves the cereal food nutritional quality by making B vitamins and other nutrients more available.
